Well, it had to happen...
Today was not a good day. Besides the fact that I now have the All-Clad logo seared into the palm of my hand, we just totally underperformed today. Everybody did.
I don't know what it was but the whole class was in a bit of a funk. In my case, I messed up a sauce so badly that after presentation the contents of my plate went straight into the garbage can.
Others burnt their meats beyond recognition, undercooked chicken and overcooked the potatoes.
We all got reamed for it. It was also a tough day because the workload was so big that there was no time for a break and we all stayed a half hour longer than usual.
Now, don't get me wrong - I do understand that this is what restaurant work will be like. And I'm not complaining about the workload.
My day was bad because I did not get the sauce right.
I did not get the sauce right because I was not ready for today, was underprepared and overwhelmed.
So from now on, I pledge to myself that I will do everything I can to be fully prepared for every lesson.
Because now I know what it feels like to mess up - and I don't like it...
On a positive note, as I'm writing this, I'm eating a baguette courtesy of Chef Hans in bread baking. I have some butter out, a Swiss "Sprinz" cheese and a bottle of 2002 Trimbach Pinot Gris. Well, by now it's only a half a bottle.
