I Miss My Old Partner...

....But I love my new one.
I lucked out with the new partner assignment today.

We made 2 fish dishes today - gutting them and everything. I'm slowly starting to be OK with the blood and gore associated with fish but the smell is a different story.
Fact is I don't like eating fish all that much and therefore probably have a low threshold for the stink.
Anyway, class was good today, we learned how to poach fish in a puffy parchment "pillowcase". Now that looked nice! And tasted good too considering it was fish.

I gotta say that after about six weeks of school now, I am starting to feel my confidence level rise.
It's more like cooking now. No more exact measuring and following recipes to the finest detail.
Trusting my taste buds has become more important, and I have become more confident overriding recipes - using them more like guidelines now.
I'm sure that attitude will bite me in the ass sometime soon...but for now it's a great newfound independance.
