Good Times

Today was the best lesson in a long time. Can't put my finger on the why and how, but it was a great class.
We made a chicken dish and a lamb dish, both were great, chef liked it etc... but that wasn't why it was good today.
I think overall the atmosphere was very relaxed and downright giddy.
A lot of us were clowning around but never in way that interfered with the task at hand.
Probably and ideal environment in terms of productivity. If I'm ever blessed with my own restaurant I'd want it to be like today every day.

Since we're on the subject of my restaurant, I would also play music in the kitchen. There would be a lot of John Lee Hooker, ZZ Top, Yello, The Specials, Bowie, Sinatra, Elvis of course and towards the end of every night a little Pink Floyd.
I would also encourage people to bring in their own music. I would however fire on the spot anyone who would play Creed in my kitchen.
