That's what level 2 is all about. Repeating the same dishes, making sure there's consistency. Sounds boring right? Well it is, it's numbing.
But today I kinda got it, I started to really understand the concept. It becomes easier, dishes become familiar and techniques become second nature.
We did very well today on our two dishes, and we were so fast that we had time to make a third.
Besides, it probably is a good idea to get used to the boredom of repetitive menue items. In a restaurant we will have to prepare the same dishes hundreds if not thousands of times.
There is in a way something comforting in that too. Being able to really perfect one's skills by being given the opportunity to hone skills by repeating the same things a million times.
I guess a chef's quest for perfection is a process that continues long after any culinary school, any internship or any position in a restaurant. It is a perpetual process driven by the need to find new techniques and the need to perfect familiar ones.
