The Stockmarket
Another nasty snowstorm in New York today and as usual a very quiet night as a result of it.
We started our Garde Manger week tonight with a simple but delicious dish. Cold asparagus with chopped egg and a vinaigrette.
Garde Manger also takes care of preparing stocks so a good partion of the night was dedicated to cleaning chicken carcasses and fishbones.
I smell and look accordingly.
Nonetheless, it was a great night, our garde manger chef is very passionate about food and great to work with. We actually will have two chefs alternating so we'll see what thursday brings.
Making stocks in big quantities is actually fun, the beef stock started with 100 pounds of beef bones and water to cover them...That is one big ass pot.
