FOTH vs BOTH

Front of the House and Back of the House don't always get along so well. Today that would have been an understatement.

Our chef erupted and went apeshit on the Maitre D' after he forgot to instruct his waitstaff to accept no more than 32 orders for duck - the dish my station prepared tonight.
We ended up with 34 orders but only had enough duck to cover 32. In the end we were able to put a little less on some plates and end up with just enough product to fulfill the orders.

But none of that mattered to our chef - it was a shouting match that had everybody stop in their tracks.
It was bizarre but at the same time it felt good to see our chef stand up for us.

Apparently, as he told us later, this rivalry is almost a sport in the restaurant business.


The duck was amazing...
