Cayenne
Cayenne is more potent than I thought.
I added a little too much to my Bechamel sauce on Thursday and was rewarded with a cringing face from the instructor. Thank god she quickly added that the consistency is absolutely beautiful.
Sauces were the name of the game on Thursday, we learned various types - my favorite was Sauce Espagnole. I really enjoyed the flavor of bacon being present - I guess after all the vegetable recipes the carnivaur in me was finally getting a taste of things to come.
I can't wait to start preparing meat dishes.
We had another test on Thursday, a big one. And I think I really messed up this time. Unfortunately I won't know until Tuesday as we have a substitute teacher on Saturday, the magnificent and funny Chef Robert.
He will tell us all about eggs which ought to be fun. Right? Eggs...It will be hysterical!
Got my first injury worth writing home about: As I was boiling up the milk for the Bechamel my dufus partner smacked into me from behind and sent the milk over my forearm and hand. I'm so happy he wasn't carrying a knife at the time.
