Back to school
I was glad to be back in class today. The Holidays were great, but I missed the gang, missed the kitchen, the smells, everything.
Not everybody made it back from wherever they went yet, some took time off until after new year's while others had flights cancelled on them.
Our group was very successful tonight, both our dishes came out beautifully. The first was sauteed salmon on a bed of spinach with beurre blanc, the second was bass in a parchment pillow.
At the end we had some leftover salmon which we used to make salmon "burgers" and salmon ceviche. The idea came from chef and it was truly amazing what she made us whip up in very little time.
These last two lessons kinda turned me into a fish eater and I'm very happy about that.
